Temperature – As the temperature increases so does enzyme activity. However, this is only true up to around 40oC. Temperatures higher than 40oC will cause the enzymes to start to denature. By about 45oC the enzymes will have passed their ‘optimum’ and will have been denatured. The temperature must be kept constant otherwise the activity of the enzymes will fluctuate and so this will effect the volume of oxygen produced. . This will mean that the temperature should not noticeably fluctuate.
